Organic Chardonnay and Pinot Noir grapes were pressed by hand and the juice was left to spontaneously ferment with wild native yeasts in steel and oak barriques. The ancestral Col Fondo technicque was used to trigger secondary fermentation in bottle yielding a natural sparkling wine.
